Hard ink has good scratch resistance, high color and low odor. Also better resistance against chemicals.
Soft ink, smells more but will not break when bending, creasign, foilding. Normally color gamut is little bit less then the hard inks

As per my best understanding hard inks will give you better gloss & scratch resistance compare to soft inks, however adhesion & flexibility will be better with soft inks.
Basically, hard or soft is the description of the features on the ink after cured by lights. After cured, hard ink will be turn rigid and fragile if knocked, soft ink will be still soft, and extensible.
For more difference, we can see the following picture: ( Mark: Grade 10 is the biggest. )
The summary is:
Hard ink has good adhesion and good hardness,good corrosion resistance, scratch resistance and color performance and less odor after cured.But can not be fold or bending.
Soft ink has good flexibility according to extensional material, odor will be more than hard ink.
Middle ink are all middle for all features.
